Provides an in-depth exploration of the art and science of sugar and chocolate confectionery, covering key techniques and methods. Emphasises understanding and applying of techniques and processes in making confectionery and chocolate products, as well as mastering décor elements. Builds on the knowledge, technical skills, and confidence needed to create a variety of high-quality confectionery items, such as sugar candies, marshmallows, fruit jellies, caramels and a variety of different chocolates. Emphasises essential finishing and presentation skills while maintaining a strong focus on food hygiene and safety principles.
